🌸 Cherry Chai Cookie: Cozy Spices, Bold Flavor, and a Little Pink Magic

What happens when a snickerdoodle takes a sabbatical to explore the spice markets of India… and comes back wearing pink?
You get our Cherry Chai Cookie.
This cookie was inspired by our current obsession: that iced cherry chai latte that’s been quietly taking over spring. Sweet cherry, warm spices, creamy vibes—it had us hooked. So we thought, “What if we baked that feeling into a cookie?” And well... we did.

✨ The Flavor Vibe
This cookie is soft, chewy, and loaded with all the chai spice goodness: cinnamon, cardamom, ginger, cloves, allspice, nutmeg, and just a whisper of black pepper. Then we swirl on a thick layer of cherry-kissed frosting, made with real freeze-dried cherry powder and a splash of cherry emulsion. The result? A flavor that’s floral, fruity, warm, and just the right amount of nostalgic.
And yes, we top it with a sprinkle of ruby red sugar for a cosmic finish—because we believe cookies should sparkle a little.

Cherry Frosting (Small Batch)
Ingredients:
¾ stick (6 tbsp) unsalted butter, softened
6 tbsp vegetable shortening
2¼ cups powdered sugar
1–2 tbsp whole milk (as needed)
½ tsp vanilla
¼ tsp almond extract
1½ tbsp freeze-dried cherry powder
¾ tsp cherry emulsion
Instructions:
Preheat oven to 350°F. Line a baking sheet with parchment.
Cream butter and sugars until light and fluffy. Add eggs, vanilla, and almond extract.
In a separate bowl, whisk together dry ingredients and spices.
Mix dry into wet until a dough forms. Scoop into large balls and roll in chai sugar.
Bake 10–12 min until edges are golden. Cool completely before frosting.
For frosting: Beat butter and shortening until smooth. Add cherry powder, cherry emulsion, extracts, and sugar. Add milk slowly until thick and spreadable.
Frost cookies generously and sprinkle with red sugar or edible glitter if you're feeling fancy.
